PCLinuxOS Recipe Corner Bonus:


Pizza Soup


Serves: 12

INGREDIENTS:

1 pound of beef
1 pound of spicy Italian sausage
1 large onion, chopped
1 large green pepper, chopped
1 can (16oz) crushed or diced tomatoes, drained*
4 garlic cloves, minced
1 jar (16 oz) salsa
1 jar (12 oz) pizza sauce
1 package (8 oz) sliced pepperoni
1 package (8 oz) sliced mushrooms
2 cups water
1 tablespoon pizza seasoning or Italian seasoning
1 teaspoon salt
1 teaspoon pepper


SOUP TOPPINGS:

2 cups shredded part-skim mozzarella cheese
1 can (4 ounces) sliced ripe black olives
4 green onions, scissor cut
Optional: red pepper flakes to taste


DIRECTIONS:

In a Dutch oven, cook the beef, sausage, onion, green pepper and garlic over medium heat until meat is no longer pink; drain.

Stir in the salsa, mushrooms, pizza sauce, pepperoni, tomatoes, water, Pizza seasoning or Italian seasoning, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until heated through, about 20 minutes.

Use a ladle to scoop soup in a bowl. Garnish with sliced black olives and green onions. Sprinkle it with mozzarella cheese and red pepper flakes to taste. Serve and enjoy this savory pizza flavored soup.


TIPS:

Can be cooked in a slow-cooker. Brown meat, onions, green pepper, and garlic and drain. Put in slow-cooker and combine the rest of the ingredients, except for the toppings, stir well and cook on low heat for 6-7 hours. Served as above.

Can be served with Croutons, Crusty Bread, Cheese Bread, Garlic Bread, or Grilled Cheese.

* Substitute tomatoes with fire roasted tomatoes to add complexity.

Can be frozen for up to 3 months. To reheat, allow thawing in the fridge overnight and then microwave, or heat in a pan on the stove top.
